Berries Espumilla


This is for real the easiest recipe in the book. It's a really well-known latino dessert that everyone loves. You can change the fruits to change the flavors, it pairs up with really anything and it can save you in a pinch!


Ingredients:

- 2 eggs 
- 1/2 cup of sugar 
- 1 teaspoon  of cream of tartar 
- mixed berries 


Preparation: 

Place your mix berries- I chose blackberries, strawberries, and raspberries- in a pot with a bit of water and some sugar. Let it warm at medium heat but 15 to 20 minutes stirring constantly. If needed crush the berries with the back of your mixing spoon until everything has become a homogeneous compote, once everything has come together and the mixture is well thickened and reduced set aside to cool. Separate the whites from the yolks and set the whites in a large mixing bowl, whisk until soft peaks have formed. At this point, you'll want to add the cream of tartar and a spoonful of sugar. While you keep mixing slowly add the berries compote in a thin stream down the side. Once you've reached stiff peaks, taste for flavor and adjust accordingly. You can serve in a small bowl or a mug, make sure to save some compote for the end to top the espumilla. If desired you can also add sprinkles on top, it's very traditional in South America. This dessert is perfect to make in a pinch when you do it it's best served as fresh as possible since it won't keep well.
